Carrot and apple muffins

Makes 9

75g brown sugar
75g soft butter
1 egg
1 tbsp natural yoghurt
1 tsp baking powder
1 apple (grated)
1 carrot (peeled and grated)
1 tsp cinnamon

Preheat oven to 170 fan. Cream the butter and sugar together. Add the egg and yoghurt and mix again. Mix in the flour, baking powder, apple, carrot and cinnamon. Place in muffin cases and bake for around 25 mins until golden and springy. Cool on wire rack. If you’re using silicon cases then pop them out when they’re still hot or they go clammy and weird.
